Instructions
- Heat a non-stick skillet with oil or cooking spray over medium heat.
- Cook the egg whites with salt and pepper, folding them over until cooked on both sides, then remove from the pan.
- Add spinach to the pan and cook until wilted, about 1-2 minutes.
- In the center of the tortilla, layer the egg whites, wilted spinach, sun-dried tomatoes, and crumbled feta, then wrap it up.
- Toast the wrapped tortilla in the skillet or a panini press until crisp on all sides.
