Crunchy Feta, Olive and Spinach Wrap

fresh herbs (mint, dill, basil)

feta (regular or vegan), crumbled

fresh green olives, roughly chopped

red chili flakes

Tzatziki Sauce
The wrap

large
tortilla wraps
-

tbsp
vegan or regular butter
Instructions
- Heat olive oil in a medium-sized pan for 30 seconds on low-medium heat.
- Add the chopped onion and cook until golden, about 4-5 minutes.
- Add garlic and cook for 1 minute, then add spinach and let it wilt down completely.
- Cook down any excess liquid before adding herbs, feta, olives, and spices.
- Cook everything for another 5 minutes, then remove from heat and let cool.
- Prepare Tzatziki Sauce for dipping.
- Place a tortilla wrap on a flat surface and cut from the center to the edge.
- Fill each side of the wrap with the spinach mixture and fold it accordingly.
- Preheat a pan with butter and cook the wrap for 2 minutes on each side on low heat.
- Serve with Tzatziki, crumbled feta, and additional herbs.
