Crunchy Feta, Olive and Spinach Wrap

Ingredients

The filling

  • 1 tbsp olive oil
  • 1 small white onion, finely chopped
  • 3 cloves garlic
  • 8 cups fresh spinach
  • a handful fresh herbs (mint, dill, basil)
  • ½ cup feta (regular or vegan), crumbled
  • 1 cup fresh green olives, roughly chopped
  • 1 tsp sea salt
  • ½ tsp fresh cracked black pepper
  • a dash red chili flakes
  • ½ cup Tzatziki Sauce

The wrap

  • 4 large tortilla wraps
  • 2 tbsp vegan or regular butter

Instructions

  1. Heat olive oil in a medium-sized pan for 30 seconds on low-medium heat.
  2. Add the chopped onion and cook until golden, about 4-5 minutes.
  3. Add garlic and cook for 1 minute, then add spinach and let it wilt down completely.
  4. Cook down any excess liquid before adding herbs, feta, olives, and spices.
  5. Cook everything for another 5 minutes, then remove from heat and let cool.
  6. Prepare Tzatziki Sauce for dipping.
  7. Place a tortilla wrap on a flat surface and cut from the center to the edge.
  8. Fill each side of the wrap with the spinach mixture and fold it accordingly.
  9. Preheat a pan with butter and cook the wrap for 2 minutes on each side on low heat.
  10. Serve with Tzatziki, crumbled feta, and additional herbs.
