Spinach Feta Pinwheels

Ingredients

Filling

  • 2 tbs olive oil
  • ½ an onion diced
  • 1 clove garlic minced
  • 8 oz fresh spinach chopped
  • ½ tsp salt
  • ¼ tsp nutmeg
  • 1 egg scrambled with a fork
  • ½ cup feta
  • 3 tbs parmesan cheese for topping

Dough

  • 2 cups gluten-free flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 2 tbs olive oil
  • ¼ cup water (or more as needed)

Instructions

  1. Preheat the oven to 350°F and grease a baking sheet.
  2. Heat olive oil in a skillet over medium-low heat, add diced onion and cook until translucent.
  3. Add garlic and cook for another 30 seconds, then add spinach and cover.
  4. Cook spinach until wilted, stirring occasionally, then add salt and nutmeg.
  5. Transfer spinach mixture to a bowl and mix in egg and feta.
  6. In a stand mixer, combine flour, baking powder, and salt, then add eggs, olive oil, and water.
  7. Mix until combined, adding more water as needed until dough comes together.
  8. Roll dough into a rectangle, spread spinach mixture evenly, and roll into a log.
  9. Cut log into 16 pieces and transfer to the baking sheet, sprinkling with parmesan.
  10. Bake for about 12 minutes until golden brown and serve warm.
