Spinach Feta Pinwheels

Instructions
- Preheat the oven to 350°F and grease a baking sheet.
- Heat olive oil in a skillet over medium-low heat, add diced onion and cook until translucent.
- Add garlic and cook for another 30 seconds, then add spinach and cover.
- Cook spinach until wilted, stirring occasionally, then add salt and nutmeg.
- Transfer spinach mixture to a bowl and mix in egg and feta.
- In a stand mixer, combine flour, baking powder, and salt, then add eggs, olive oil, and water.
- Mix until combined, adding more water as needed until dough comes together.
- Roll dough into a rectangle, spread spinach mixture evenly, and roll into a log.
- Cut log into 16 pieces and transfer to the baking sheet, sprinkling with parmesan.
- Bake for about 12 minutes until golden brown and serve warm.
