Cheesy Spinach Pinwheels
Ingredients
The filling

fresh spinach, chopped or torn into pieces

Parmesan cheese, freshly & finely grated

crumbled Feta cheese

The pastry

sheet
frozen puff pastry, defrosted
Instructions
- 1. Roll out the defrosted puff pastry into a 10”x14” rectangle on a floured surface.
- 2. Heat olive oil in a skillet over medium heat and cook minced garlic for about a minute.
- 3. Add spinach to the skillet and cook until wilted, about 2-3 minutes, seasoning with salt and pepper.
- 4. Spread the cooked spinach evenly over the puff pastry, then sprinkle Parmesan and Feta cheeses on top.
- 5. Roll the pastry tightly from the longer side into a log and wrap it in parchment paper or cling wrap.
- 6. Freeze the rolled pastry for 30-40 minutes to make slicing easier.
- 7. Preheat the oven to 400°F and line a baking sheet with parchment paper.
- 8. Slice the chilled pastry log into 24 even spirals and place them on the prepared baking sheet.
- 9. Bake for 20 minutes or until lightly golden, then serve warm.
