Spinach Puffs

The pastry

frozen puff pastry (9- or 10-inch), thawed overnight in the refrigerator
Instructions
- Preheat the oven to 400°F and prepare muffin tins with nonstick spray.
- Cook the bacon until crispy, then chop or crumble it.
- Microwave the cream cheese until soft, then mix in one egg, garlic powder, black pepper, and oregano.
- In a separate bowl, combine spinach, feta, Parmesan, and bacon, then mix with the cream cheese mixture.
- Roll out the puff pastry and cut into squares, then line the muffin tin with the pastry.
- Fill each pastry cup with the spinach filling and bring the corners together to cover the filling.
- Brush the tops with the remaining beaten egg.
- Bake for 21 to 24 minutes until golden, then cool slightly before serving.
