Spinach Balls

Ingredients

  • 2 packages frozen chopped spinach
  • 4 large eggs
  • ¼ cup water
  • 4 tablespoons light butter, melted
  • 6 oz seasoned stuffing mix, dry/unprepared
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper or foil.
  2. In a large bowl, beat the eggs and then mix in the water, melted butter, stuffing mix, Parmesan cheese, garlic powder, onion powder, salt, and pepper until combined.
  3. Stir in the thawed and squeezed spinach until well mixed.
  4. Divide the mixture into 32 equal portions and roll them into balls about 1 to 1½ inches thick.
  5. Place the spinach balls on the prepared baking sheet and bake for 18-20 minutes until heated through and lightly browned.
