Ingredients

The wrap

  • 4 pieces whole wheat tortillas
  • 2 cups baby spinach

The filling

  • ½ cup uncooked quinoa
  • ½ tsp cumin
  • ¼ cup salsa
  • 1 Tbsp cilantro, chopped
  • 1 cup liquid egg whites
  • 1 pinch salt
  • 1 pinch pepper
  • Optional avocado
  • Optional tomatoes
  • Optional shredded cheese

Instructions

  1. Rinse the quinoa and combine it with water in a saucepan, bring to a boil, then simmer for about 13 minutes.
  2. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  3. Mix in cumin, salsa, and cilantro with the quinoa.
  4. In a nonstick skillet, scramble the egg whites over medium heat until set, about 2 to 3 minutes.
  5. On each tortilla, layer spinach, quinoa, scrambled egg whites, and any optional toppings.
  6. Roll up the tortilla tightly, slice, and enjoy.
