Quinoa Egg White Breakfast Wrap

Instructions
- Rinse the quinoa and combine it with water in a saucepan, bring to a boil, then simmer for about 13 minutes.
- Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Mix in cumin, salsa, and cilantro with the quinoa.
- In a nonstick skillet, scramble the egg whites over medium heat until set, about 2 to 3 minutes.
- On each tortilla, layer spinach, quinoa, scrambled egg whites, and any optional toppings.
- Roll up the tortilla tightly, slice, and enjoy.
