Instructions
- Whisk together egg whites, egg, salt, and pepper in a small bowl.
- Heat a medium sauté pan over medium heat.
- Add chorizo and cook for about 1 minute on each side until slightly browned.
- Add vinegar and cook for another minute to reduce.
- Add the egg mixture to the pan and scramble until cooked, stirring often.
- Serve the mixture on the low carb high fiber tortillas.
