Ingredients

The filling

  • 2 oz chorizo, skin removed, sliced
  • 1 tbsp red wine vinegar
  • 3 large egg whites
  • 1 large egg
  • to taste salt and pepper

The wrap

  • 2 high fiber low carb whole wheat wraps

Instructions

  1. Whisk together egg whites, egg, salt, and pepper in a small bowl.
  2. Heat a medium sauté pan over medium heat.
  3. Add chorizo and cook for about 1 minute on each side until slightly browned.
  4. Add vinegar and cook for another minute to reduce.
  5. Add the egg mixture to the pan and scramble until cooked, stirring often.
  6. Serve the mixture on the low carb high fiber tortillas.
