Ingredients

The salad

  • 4 cups fresh spinach
  • 1 cup edamame
  • 1 cup chickpeas
  • ½ cup dried cranberries
  • ¼ cup pepitas
  • 1 cup carrots, shredded

The dressing

  • 2 tablespoons fresh lemon juice
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Combine spinach, edamame, chickpeas, dried cranberries, pepitas, and shredded carrots in a large bowl.
  2. In a jar, mix lemon juice, olive oil, salt, and pepper, then shake to combine.
  3. Drizzle the dressing over the salad just before serving and toss to coat.
