Ingredients

The salad

  • 8-10 cups fresh spinach leaves
  • 4 cups sprouted beans
  • 1 cup almonds, roasted
  • 1 pint white mushrooms, sliced
  • 1 each red bell pepper, sliced
  • ½ cup dried cranberries

The vinaigrette

  • ¼ cup extra-virgin olive oil
  • ¼ cup unseasoned rice vinegar
  • ¼ cup tamari
  • ¼ cup pure maple syrup
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 large garlic clove, minced
  • 1 tbsp grated fresh ginger

Instructions

  1. Combine all salad ingredients in a large mixing bowl.
  2. In a separate bowl, whisk together all vinaigrette ingredients until well mixed.
  3. When ready to serve, pour the vinaigrette over the salad and toss to combine.
