Cheeseburger Wonton Cupcakes

Ingredients

The filling

  • ¼ cup onion, finely chopped
  • ½ lb 95% lean ground beef
  • 1 tablespoon McCormick Hamburger Seasoning
  • 4 oz mushrooms, chopped
  • 4 pieces Laughing Cow Pepper Jack cheese wedges, chopped
  • 3 tablespoons ketchup
  • 1 tablespoon mustard
  • ½ cup tomatoes, chopped

The wrappers and cheese

  • 16 pieces wonton wrappers
  • 4 oz reduced fat 2% shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F and mist 8 cups in a muffin tin with cooking spray.
  2. In a skillet, sauté chopped onions until cooked, then add ground beef and seasoning, cooking until browned.
  3. Add mushrooms to the skillet and cook until browned.
  4. In a bowl, combine the meat mixture with cheese wedges, ketchup, and mustard, then microwave for one minute and stir.
  5. Push a wonton wrapper into each muffin cup, fill with half of the meat mixture, and add some chopped tomatoes and cheddar cheese.
  6. Top with another wonton wrapper and repeat the layering with remaining ingredients.
  7. Bake for 18-20 minutes until golden brown, then cool for 5 minutes before removing from the tin.
