Instructions
- Preheat the oven to 425°F with a large sheet tray drizzled with oil inside.
- Slice the sweet potatoes into ¼ inch disks.
- Remove the hot sheet tray and season it with salt and pepper.
- Arrange the potato disks in a single layer on the tray, spray with cooking spray, and season again.
- Bake for 20 minutes, then flip the chips and bake for another 15 minutes until crisp.
- Let the chips sit for 5-10 minutes while preparing the sauce.
- Mix the mayo, mustards, and honey or maple syrup to taste for the dipping sauce.
