Ingredients

The Chips

  • 2 large Sweet Potatoes
  • 3 tbsp Avocado or Canola Oil
  • to taste Kosher Salt
  • to taste Black Pepper
  • as needed Avocado or Olive Oil Cooking Spray

The Sauce

  • cup Egg Free Mayo
  • 2 tbsp Dijon Mustard
  • ½ tbsp Stone Ground Mustard
  • 2 tbsp honey or maple syrup

Instructions

  1. Preheat the oven to 425°F with a large sheet tray drizzled with oil inside.
  2. Slice the sweet potatoes into ¼ inch disks.
  3. Remove the hot sheet tray and season it with salt and pepper.
  4. Arrange the potato disks in a single layer on the tray, spray with cooking spray, and season again.
  5. Bake for 20 minutes, then flip the chips and bake for another 15 minutes until crisp.
  6. Let the chips sit for 5-10 minutes while preparing the sauce.
  7. Mix the mayo, mustards, and honey or maple syrup to taste for the dipping sauce.
