Instructions
- Pat the salmon fillets dry and heat vegetable oil in a skillet over medium heat.
- Cook the salmon for 1 to 2 minutes on one side, then flip and cook for another minute until golden brown.
- Transfer the salmon to a plate and set aside.
- In the same skillet, add half of the coconut cream and cook for 1 minute.
- Stir in the red curry paste and cook for 5 minutes until glossy and fragrant.
- Add the remaining coconut cream, sugar, fish sauce, half of the cilantro, and lime zest; stir well.
- Reduce heat and let the sauce simmer for 1 to 2 minutes until thickened.
- Spoon the sauce over the salmon and serve immediately, garnished with cilantro and red bell pepper.
