Choo Chee Salmon

Ingredients

The salmon

  • 1 lb salmon fillets
  • 1 tablespoon vegetable oil

The sauce

  • 1 2/3 cups coconut cream
  • 3 tablespoons Thai red curry paste
  • 1 tablespoon sugar
  • 1 teaspoon fish sauce
  • ½ cup cilantro, finely chopped
  • 1 teaspoon lime zest
  • 1 medium red bell pepper, julienned

Instructions

  1. Pat the salmon fillets dry and heat vegetable oil in a skillet over medium heat.
  2. Cook the salmon for 1 to 2 minutes on one side, then flip and cook for another minute until golden brown.
  3. Transfer the salmon to a plate and set aside.
  4. In the same skillet, add half of the coconut cream and cook for 1 minute.
  5. Stir in the red curry paste and cook for 5 minutes until glossy and fragrant.
  6. Add the remaining coconut cream, sugar, fish sauce, half of the cilantro, and lime zest; stir well.
  7. Reduce heat and let the sauce simmer for 1 to 2 minutes until thickened.
  8. Spoon the sauce over the salmon and serve immediately, garnished with cilantro and red bell pepper.
