celery (cut into 2 inch pieces)

Instructions
- Mix all the seasoning ingredients in a bowl.
- Prepare the brine and brine the turkey for 18-24 hours.
- Preheat the oven to 425°F.
- Remove the turkey from the brine, rinse, and pat dry. Let it stand at room temperature for 20 minutes.
- Stuff the turkey cavity with onion, celery, and bell pepper, then tie the legs together.
- Combine the Cajun seasoning with softened butter and rub it all over the turkey.
- Place the turkey in a roasting pan and bake for 30 minutes.
- Reduce the oven temperature to 350°F and continue roasting, basting every 30 minutes, until the turkey reaches 165°F.
- If browning too quickly, cover the turkey with foil.
- Remove from the oven, tent with foil, and let it rest for 10 minutes before slicing.
