Bubble Up Breakfast Casserole

Ingredients

  • 1 medium sweet potato
  • 4 slices Center Cut bacon, chopped
  • 1 lb hot Italian poultry sausage, casings removed
  • 1 can (7.5 oz) refrigerated biscuit dough, cut into quarters
  • 4 large eggs
  • 4 large egg whites
  • 3 tablespoons water
  • to taste salt and pepper
  • a pinch crushed red pepper flakes
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. Preheat the oven to 350°F and mist a 9x13 baking dish with cooking spray.
  2. Pierce the sweet potato with a fork and microwave for 6-8 minutes until soft, then peel and dice.
  3. In a skillet, cook the bacon until crisp, then drain the grease and add the sausage, cooking until browned.
  4. Combine the cooked bacon, sausage, sweet potatoes, and biscuit pieces in the baking dish.
  5. In a bowl, whisk together eggs, egg whites, water, salt, pepper, and red pepper flakes, then pour over the casserole mixture.
  6. Bake for 25 minutes, then add cheddar cheese on top and bake for an additional 10 minutes until bubbly.
