Ingredients

The pudding

  • 12 egg yolks egg yolks
  • ¼ cup agave nectar or honey
  • 1 pinch celtic sea salt
  • ¼ cup lemon juice

The whipped cream

  • ½ cup heavy cream

Instructions

  1. 1. In a medium saucepan, combine egg yolks, agave nectar, and salt.
  2. 2. Heat the mixture over a very low flame while whipping with a hand blender for 6-8 minutes.
  3. 3. Add lemon juice and mix well.
  4. 4. Chill the pudding for 30 minutes.
  5. 5. If the pudding separates, whip it again with a hand blender for 1-2 minutes until fluffy.
  6. 6. In a separate bowl, whip the heavy cream.
  7. 7. Serve in small glasses, layering the pudding and whipped cream alternately.
  8. 8. Garnish with berries.
