Lemon Pudding Parfait

Instructions
- 1. In a medium saucepan, combine egg yolks, agave nectar, and salt.
- 2. Heat the mixture over a very low flame while whipping with a hand blender for 6-8 minutes.
- 3. Add lemon juice and mix well.
- 4. Chill the pudding for 30 minutes.
- 5. If the pudding separates, whip it again with a hand blender for 1-2 minutes until fluffy.
- 6. In a separate bowl, whip the heavy cream.
- 7. Serve in small glasses, layering the pudding and whipped cream alternately.
- 8. Garnish with berries.
