Vanilla Bean & Banana Pudding Parfaits

Ingredients

Pudding Base

  • 1 large egg
  • 3 tablespoons cornstarch
  • 2 cups low-fat milk
  • ¼ cup light agave nectar
  • ¼ teaspoon salt
  • 1 vanilla bean or 2 teaspoons pure vanilla extract
  • 1 tablespoon unsalted butter, cold
  • 1 teaspoon banana extract

Toppings

  • 2 small bananas
  • ½ cup fine graham cracker crumbs
  • ¼ cup low-fat vanilla Greek yogurt or whipped cream

Instructions

  1. Whisk the egg and cornstarch in a medium saucepan off heat.
  2. Stir in the milk, agave nectar, and salt.
  3. Cut the vanilla bean in half and scrape out the pulp, adding it to the pot.
  4. Place the pot on medium heat and stir continuously until the mixture thickens and bubbles, about 5 minutes.
  5. Pour the pudding through a fine strainer into a bowl, then add the butter and banana extract, stirring to cool.
  6. Cover the pudding with plastic film placed directly on it to avoid skin formation and chill until ready to serve.
  7. Slice the bananas and layer them with pudding in glasses or bowls, sprinkling with graham cracker crumbs.
  8. Top with a dollop of yogurt or whipped cream.
