Vanilla Bean & Banana Pudding Parfaits

Instructions
- Whisk the egg and cornstarch in a medium saucepan off heat.
- Stir in the milk, agave nectar, and salt.
- Cut the vanilla bean in half and scrape out the pulp, adding it to the pot.
- Place the pot on medium heat and stir continuously until the mixture thickens and bubbles, about 5 minutes.
- Pour the pudding through a fine strainer into a bowl, then add the butter and banana extract, stirring to cool.
- Cover the pudding with plastic film placed directly on it to avoid skin formation and chill until ready to serve.
- Slice the bananas and layer them with pudding in glasses or bowls, sprinkling with graham cracker crumbs.
- Top with a dollop of yogurt or whipped cream.
