Ingredients

Caramelized Bananas

  • ¼ cup unsalted butter
  • ½ cup packed light or dark brown sugar
  • ¼ teaspoon ground cinnamon
  • 5 large semi-ripe bananas, sliced

Pudding & Assembly

  • 2 ¼ cups whole milk
  • ½ cup heavy cream
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 1 ½ teaspoons pure vanilla extract
  • 3 tablespoons unsalted butter, softened
  • about 50 pieces vanilla wafer cookies

Cinnamon Whipped Cream & Optional Garnish

  • 1 ½ cups heavy cream
  • ¼ cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • optional quartered banana slices and/or crumbled vanilla wafer cookies

Instructions

  1. 1. Melt butter, brown sugar, and cinnamon in a skillet over medium heat, then add banana slices and cook until softened.
  2. 2. In a saucepan, combine milk, heavy cream, sugar, and salt, and bring to a gentle simmer. Whisk egg yolks and cornstarch in a bowl, then temper with warm milk mixture before adding back to the saucepan.
  3. 3. Cook the mixture until thickened, then remove from heat and stir in vanilla and butter.
  4. 4. In a baking dish, layer half of the vanilla wafers, half of the caramelized bananas, and half of the pudding. Repeat the layers.
  5. 5. Whip heavy cream, confectioners’ sugar, vanilla, and cinnamon until medium peaks form, then spread over the pudding.
  6. 6. Cover and refrigerate for at least 4 hours before serving.
