Instructions
- 1. Melt butter, brown sugar, and cinnamon in a skillet over medium heat, then add banana slices and cook until softened.
- 2. In a saucepan, combine milk, heavy cream, sugar, and salt, and bring to a gentle simmer. Whisk egg yolks and cornstarch in a bowl, then temper with warm milk mixture before adding back to the saucepan.
- 3. Cook the mixture until thickened, then remove from heat and stir in vanilla and butter.
- 4. In a baking dish, layer half of the vanilla wafers, half of the caramelized bananas, and half of the pudding. Repeat the layers.
- 5. Whip heavy cream, confectioners’ sugar, vanilla, and cinnamon until medium peaks form, then spread over the pudding.
- 6. Cover and refrigerate for at least 4 hours before serving.
