Ingredients

The pudding

  • 2 eggs eggs
  • 6 ounces good-quality dark chocolate
  • 4 tablespoons water
  • 4 tablespoons fine grain sugar
  • 4 tablespoons unsalted butter
  • a pinch none fine grain sea salt

Optional topping

  • to taste none heavy cream, loosely whipped, slightly sweetened

Instructions

  1. Separate the egg whites and yolks.
  2. Beat the egg whites until stiff peaks form.
  3. Combine chocolate, water, sugar, butter, and salt in a double boiler and melt gently.
  4. Once melted, remove from heat and mix in the egg yolks.
  5. Fold in the beaten egg whites gently until smooth.
  6. Pour the pudding into serving cups and chill for a few hours before serving.
  7. Serve topped with whipped cream if desired.
