Ingredients

Crust

Filling

  • ½ cup sugar
  • 3 Tbsp. unsweetened cocoa powder
  • 2 Tbsp. cornstarch
  • 2 large eggs
  • 2 large egg yolks
  • cups whole milk
  • 1 tsp. vanilla extract
  • ½ tsp. kosher salt
  • 4 oz. bittersweet chocolate

Assembly

  • 1 tsp. unflavored powdered gelatin
  • 2 cups heavy cream
  • 2 Tbsp. sugar
  • 2 tsp. vanilla extract
  • 1 tsp. kosher salt
  • to taste unsweetened cocoa powder

Instructions

  1. Prepare the crust by mixing sugar, salt, and flour in a bowl, then incorporating butter and water to form a dough.
  2. Chill the dough and then roll it out to fit a pie dish, crimping the edges and chilling again.
  3. Preheat the oven and bake the crust with weights until golden brown.
  4. Make the filling by whisking together sugar, cocoa, cornstarch, eggs, milk, vanilla, and salt, then cook until thickened.
  5. Add melted chocolate to the filling and pour it into the cooled crust, then chill until set.
  6. Prepare the whipped cream by melting gelatin and mixing it with cream, sugar, vanilla, and salt until soft peaks form.
  7. Spread the whipped cream over the chilled filling and dust with cocoa powder if desired.
