Ingredients

  • cup cocoa powder
  • ¼ cup arrowroot starch
  • ¼ tsp salt
  • 2 cups milk
  • cup maple syrup
  • 4 large egg yolks
  • 2 tbs butter
  • 1 tsp vanilla extract

Instructions

  1. In a medium pot, whisk together the cocoa powder, arrowroot starch, and salt.
  2. Slowly whisk the milk into the dry ingredients until well combined.
  3. In a small bowl, whisk the egg yolks, then add the maple syrup and egg yolks to the pot and whisk thoroughly.
  4. Cook the mixture over medium heat, whisking constantly, until it thickens and bubbles form, about 6 to 7 minutes.
  5. Reduce the heat to low and whisk for another minute.
  6. Stir in the butter and vanilla, whisking until the butter is melted.
  7. Divide the pudding into four serving bowls, cover with plastic wrap, and refrigerate for at least 3 hours before serving.
