Instructions
- In a medium pot, whisk together the cocoa powder, arrowroot starch, and salt.
- Slowly whisk the milk into the dry ingredients until well combined.
- In a small bowl, whisk the egg yolks, then add the maple syrup and egg yolks to the pot and whisk thoroughly.
- Cook the mixture over medium heat, whisking constantly, until it thickens and bubbles form, about 6 to 7 minutes.
- Reduce the heat to low and whisk for another minute.
- Stir in the butter and vanilla, whisking until the butter is melted.
- Divide the pudding into four serving bowls, cover with plastic wrap, and refrigerate for at least 3 hours before serving.
