Homemade Chocolate Pudding

Ingredients

The pudding

  • ½ cup granulated sugar
  • ¼ cup Dutch process cocoa powder
  • 2 Tbsp cornstarch
  • ¼ tsp salt
  • cups whole milk
  • 3 large egg yolks
  • 3 oz semi-sweet chocolate
  • 2 Tbsp unsalted butter
  • 2 tsp vanilla extract

The topping

  • ½ cup heavy cream
  • 1 Tbsp granulated sugar

Instructions

  1. Whisk together the sugar, cocoa powder, cornstarch, and salt in a medium saucepan.
  2. Add the milk and egg yolks, whisking well to combine.
  3. Cook the mixture over medium-high heat, stirring constantly to prevent skin from forming.
  4. Once thickened and simmering, reduce heat to medium-low and let simmer for 30 seconds while whisking.
  5. Remove from heat and strain the mixture into a heatproof bowl, then add the chocolate, butter, and vanilla, whisking until smooth.
  6. Cover with plastic wrap pressed against the surface to prevent a skin from forming.
  7. Chill the pudding for 4 hours to thicken.
  8. Whip the heavy cream and sugar until stiff peaks form.
  9. Stir the pudding, spoon it into serving dishes, top with whipped cream, and garnish with shaved chocolate.
