Dairy-Free Chocolate Pudding

Instructions
- Mix the dry ingredients in a medium saucepot.
- With the heat off, slowly mix in ½ cup of non-dairy milk until thick.
- Turn on medium-high heat and whisk in the remaining milk and coconut cream.
- Once bubbling, stir in the chocolate chips and reduce heat to medium-low.
- Simmer until the mixture coats the back of a spoon, then turn off the heat.
- Mix in espresso powder, vanilla extract, and salt.
- Allow to cool to room temperature, then refrigerate for at least 4 hours.
