Ingredients

The pudding

  • ½ cup organic granulated sugar
  • ¼ cup cocoa powder
  • ¼ cup cornstarch
  • 2 cups unsweetened soy milk
  • ½ cup coconut cream
  • cup vegan chocolate chips
  • ½ teaspoon espresso powder
  • ½ teaspoon vanilla extract
  • teaspoon salt

Toppings

  • handful crushed cookies
  • vegan whipped cream

Instructions

  1. Mix the dry ingredients in a medium saucepot.
  2. With the heat off, slowly mix in ½ cup of non-dairy milk until thick.
  3. Turn on medium-high heat and whisk in the remaining milk and coconut cream.
  4. Once bubbling, stir in the chocolate chips and reduce heat to medium-low.
  5. Simmer until the mixture coats the back of a spoon, then turn off the heat.
  6. Mix in espresso powder, vanilla extract, and salt.
  7. Allow to cool to room temperature, then refrigerate for at least 4 hours.
