Paleo Chocolate Pudding

Instructions
- Shake the can of coconut milk and pour ¼ cup into a measuring cup, then whisk in the gelatin until well combined.
- Heat the remaining coconut milk, cocoa powder, honey, and salt over medium heat, stirring frequently until mixed.
- Cook until bubbles appear on the edges, then turn off the heat.
- Add the gelatin/coconut milk mixture and vanilla extract to the pan and stir well.
- Chill the mixture for 30 minutes uncovered, then cover and chill for an additional 1½ hours until solid.
- Use a hand mixer or whisk to beat the pudding until fluffy and smooth.
- Divide the pudding into four bowls or cups and top with whipped coconut cream and shaved dark chocolate if desired.
