Paleo Chocolate Pudding

Ingredients

The pudding

  • 13.5 ounces full-fat canned coconut milk
  • 2 teaspoons gelatin
  • cup unsweetened cocoa powder
  • ¼ cup honey
  • teaspoon Diamond Crystal kosher salt
  • 2 teaspoons vanilla extract

Optional toppings

  • to taste whipped coconut cream
  • to taste shaved dark chocolate

Instructions

  1. Shake the can of coconut milk and pour ¼ cup into a measuring cup, then whisk in the gelatin until well combined.
  2. Heat the remaining coconut milk, cocoa powder, honey, and salt over medium heat, stirring frequently until mixed.
  3. Cook until bubbles appear on the edges, then turn off the heat.
  4. Add the gelatin/coconut milk mixture and vanilla extract to the pan and stir well.
  5. Chill the mixture for 30 minutes uncovered, then cover and chill for an additional 1½ hours until solid.
  6. Use a hand mixer or whisk to beat the pudding until fluffy and smooth.
  7. Divide the pudding into four bowls or cups and top with whipped coconut cream and shaved dark chocolate if desired.
