Paleo Vanilla Pudding Parfaits

Ingredients

The pudding

  • 13.5 ounces full-fat canned coconut milk
  • 2 teaspoons gelatin
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • teaspoon Diamond Crystal kosher salt

The toppings

  • 2 cups mixed berries, cut into bite-sized pieces (e.g. strawberries, blueberries, raspberries, etc.)

Instructions

  1. Shake the can of coconut milk well, and pour ¼ cup into a medium bowl.
  2. Sprinkle the gelatin on top and whisk to remove lumps, then set aside.
  3. Heat the remaining coconut milk and honey over medium heat until steaming, stirring frequently.
  4. Pour the hot mixture into the bowl with the gelatin and whisk to combine.
  5. Stir in the vanilla extract and salt.
  6. Refrigerate uncovered for 30 minutes, then cover and chill until firm, at least 2 hours.
  7. Once ready to serve, beat the pudding until fluffy with a mixer.
  8. Divide the pudding into bowls or cups, layering with berries.
  9. Serve immediately.
