Paleo Vanilla Pudding Parfaits

The toppings

mixed berries, cut into bite-sized pieces (e.g. strawberries, blueberries, raspberries, etc.)
Instructions
- Shake the can of coconut milk well, and pour ¼ cup into a medium bowl.
- Sprinkle the gelatin on top and whisk to remove lumps, then set aside.
- Heat the remaining coconut milk and honey over medium heat until steaming, stirring frequently.
- Pour the hot mixture into the bowl with the gelatin and whisk to combine.
- Stir in the vanilla extract and salt.
- Refrigerate uncovered for 30 minutes, then cover and chill until firm, at least 2 hours.
- Once ready to serve, beat the pudding until fluffy with a mixer.
- Divide the pudding into bowls or cups, layering with berries.
- Serve immediately.
