Easy Chocolate Pudding

Ingredients

  • ½ cup chocolate chips
  • 1 can (13.5 ounces) full fat coconut milk
  • ¼ cup xylitol
  • 1 tablespoon coconut oil

Instructions

  1. Chop the chocolate chips in a food processor until coarsely chopped.
  2. In a medium pot, heat the coconut milk, xylitol, and coconut oil until simmering.
  3. Pour the coconut milk mixture into the food processor and blend until smooth.
  4. Pour the mixture into ½ cup mason jars and refrigerate overnight.
  5. Serve the pudding chilled.
