Ingredients

The cake batter

  • ¾ cup all purpose flour
  • ¾ cup granulated sugar
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • cup unsweetened cocoa powder
  • ½ cup milk
  • 3 tablespoons unsalted butter, melted
  • teaspoons vanilla extract

The pudding layer

  • ½ cup firmly packed brown sugar
  • ¼ cup unsweetened cocoa powder
  • cups boiling water
  • cooking spray
  • berries, whipped cream, and mint for garnish if desired

Instructions

  1. Preheat the oven to 350°F and grease a baking dish.
  2. In a medium bowl, combine flour, sugar, baking powder, baking soda, salt, and cocoa.
  3. Add milk, melted butter, and vanilla to the dry ingredients and stir until blended.
  4. Spoon the batter into the prepared dish.
  5. In a small bowl, mix brown sugar and remaining cocoa, then sprinkle over the batter.
  6. Pour boiling water over the entire mixture without stirring.
  7. Bake for 35 to 38 minutes until a toothpick inserted comes out clean.
  8. Cool for at least 10 minutes before serving with garnishes if desired.
