Ingredients

The pie

  • 1 single pie crust
  • cups whole milk
  • 1 cup white granulated sugar
  • 2 Anaheim chiles, chopped
  • 3 tablespoons cocoa powder
  • ¼ cup corn starch
  • 2 tablespoons corn starch
  • 1 teaspoon salt
  • 1 cup heavy cream
  • 3 large egg yolks
  • 3 ounces chopped dark chocolate, 60% cocoa

Whipped cream topping

  • ¾ cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. 1. Preheat the oven to 400°F and blind-bake the pie crust for 20 minutes.
  2. 2. Lower the oven temperature to 300°F and bake for an additional 20 minutes.
  3. 3. In a saucepan, heat milk, sugar, and chopped chiles until hot, then steep for 30 minutes.
  4. 4. Blend the steeped milk and strain to remove chile bits.
  5. 5. Whisk together cocoa powder, corn starch, and salt in a bowl.
  6. 6. Incorporate heavy cream into the dry mixture until smooth, then add egg yolks.
  7. 7. Reheat the steeped milk and temper the egg mixture with hot milk.
  8. 8. Combine the egg mixture with the milk and cook until thickened.
  9. 9. Pour the pudding into the cooled pie shell and refrigerate for 2 to 4 hours.
  10. 10. Whip heavy cream and powdered sugar until soft peaks form, then top the pie before serving.
