Instructions
- 1. Preheat the oven to 400°F and blind-bake the pie crust for 20 minutes.
- 2. Lower the oven temperature to 300°F and bake for an additional 20 minutes.
- 3. In a saucepan, heat milk, sugar, and chopped chiles until hot, then steep for 30 minutes.
- 4. Blend the steeped milk and strain to remove chile bits.
- 5. Whisk together cocoa powder, corn starch, and salt in a bowl.
- 6. Incorporate heavy cream into the dry mixture until smooth, then add egg yolks.
- 7. Reheat the steeped milk and temper the egg mixture with hot milk.
- 8. Combine the egg mixture with the milk and cook until thickened.
- 9. Pour the pudding into the cooled pie shell and refrigerate for 2 to 4 hours.
- 10. Whip heavy cream and powdered sugar until soft peaks form, then top the pie before serving.
