The topping

  • 1 cup heavy whipping cream
  • 1 tablespoon monk fruit sweetener
  • 1 ounce chocolate (optional topping)

Instructions

  1. Make the crust by blending graham crackers into fine crumbs, mixing with coconut sugar and melted butter, then pressing into a pie dish and chilling for 30 minutes.
  2. For the filling, blend avocados until smooth, then add cocoa powder, sea salt, maple syrup, and vanilla, blending until creamy. Add almond milk to reach desired consistency.
  3. Chill a bowl for the whipped cream, then whisk heavy cream and monk fruit until medium to stiff peaks form.
  4. Assemble the pie by spreading the chocolate avocado pudding into the crust, topping with whipped cream, and optionally garnishing with chopped chocolate.
