Instructions
- Make the crust by blending graham crackers into fine crumbs, mixing with coconut sugar and melted butter, then pressing into a pie dish and chilling for 30 minutes.
- For the filling, blend avocados until smooth, then add cocoa powder, sea salt, maple syrup, and vanilla, blending until creamy. Add almond milk to reach desired consistency.
- Chill a bowl for the whipped cream, then whisk heavy cream and monk fruit until medium to stiff peaks form.
- Assemble the pie by spreading the chocolate avocado pudding into the crust, topping with whipped cream, and optionally garnishing with chopped chocolate.
- Chill the assembled pie for at least 3 hours before serving.
