Fresh Peach Salad

Ingredients

The salad

  • 4-6 pieces peaches, cut into wedges
  • 8 pieces cherry tomatoes, halved
  • 1 piece cucumber, halved and chopped
  • 1 cup cubed feta cheese
  • ½ cup thinly sliced red onions
  • 1 cup sliced green olives
  • 2 tbsp olive oil
  • 1 tsp salt

The croutons

  • 3 cups cubed bread (about 400g loaf)
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper

The dressing

  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 piece juice of one lemon

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the bread into cubes and toss with olive oil, garlic powder, salt, and pepper on a parchment-lined sheet pan.
  3. Bake for about 10-12 minutes until golden, then remove and set aside.
  4. In a large bowl, combine the peaches, tomatoes, cucumber, feta cheese, onion, green olives, and toasted bread.
  5. Drizzle with olive oil, lemon juice, and salt, then toss to combine.
  6. Let sit for 10 minutes before serving, adjusting seasonings if needed.
