Gluten-Free Pizza with Almond Flour Pizza Crust

Ingredients

The crust

  • 3 tablespoons flaxseed meal
  • 2 ¼ cups almond flour or meal
  • 1 teaspoon Italian herb seasoning
  • ½ teaspoon baking powder
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil

The toppings

  • 1 cup shredded part-skim mozzarella cheese or dairy-free cheese
  • ¾ cup shredded zucchini
  • ½ cup shredded carrots
  • 3 tablespoons finely chopped green olives
  • ½ cup bottled mild salsa
  • 4 ounces ground Italian-seasoned turkey or natural turkey sausage
  • to taste fresh dill sprigs

Instructions

  1. 1. Preheat the oven to 350°F and prepare two sheets of parchment paper for a large sheet pan.
  2. 2. Combine flaxseed meal with 3 tablespoons of water and let it rest for 1 minute.
  3. 3. In a bowl, mix almond flour, Italian seasoning, baking powder, salt, and pepper, breaking up any lumps.
  4. 4. Add the flaxseed mixture, olive oil, and 1 tablespoon of water to the dry ingredients and stir until a dough forms.
  5. 5. Roll out the dough between the parchment sheets to about 1/8-inch thickness, then transfer it to the pan.
  6. 6. Bake the crust for 13-15 minutes until lightly golden around the edges.
  7. 7. Switch the oven to low broil after baking.
  8. 8. In a bowl, combine cheese, zucchini, carrots, and olives.
  9. 9. Spread salsa over the baked crust, then top with the cheese mixture and pieces of turkey.
  10. 10. Broil for 5 minutes, then bake for an additional 5 minutes until the cheese bubbles and browns.
  11. 11. Sprinkle with dill and cut into 12 pieces.
