Ingredients

  • 1 pound whole wheat macaroni
  • 4 cups water
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon spicy brown mustard
  • 1 ½ teaspoons fine sea salt
  • 1 pound cauliflower florets (fresh or frozen)
  • 4 ounces extra-sharp cheddar cheese
  • ¼ cup grated parmesan cheese (or other choice like Gruyere)

Instructions

  1. 1. Pour the pasta into the Instant Pot and add the water, soy sauce, mustard, and salt. Stir to combine.
  2. 2. Layer the cauliflower on top of the pasta without stirring.
  3. 3. Secure the lid and set the steam release valve to Sealing.
  4. 4. Cook on high pressure for 3 minutes.
  5. 5. After cooking, let the pressure naturally release for 10 minutes, then vent any remaining pressure.
  6. 6. Remove the lid and stir the pasta, breaking up any stuck pieces.
  7. 7. Mash any intact cauliflower florets against the side of the pot to help them dissolve.
  8. 8. Stir in the cheddar and parmesan cheese, adjusting seasonings as needed, and serve warm.
