Ingredients

The filling

  • 2 tbsp oil
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 medium red pepper, chopped
  • 1 ½ tsp seasoning with chili
  • ½ tsp ground cumin
  • 1 19 oz can red beans
  • 2 cups cooked rice
  • 1 cup cheese

The assembly

  • 4 pieces tortillas
  • ½ cup salsa
  • ½ cup sour cream

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion, garlic, red pepper, chili powder, and cumin; sauté until tender.
  3. Drain and rinse the red beans, then add them along with the cooked rice to the skillet.
  4. Reduce heat and cook for 2 to 3 minutes until the mixture is hot, stirring constantly.
  5. Remove from heat and place about ½ cup of the mixture and ¼ cup of cheese in each tortilla.
  6. Wrap the tortillas and top with salsa and sour cream.
