Instructions
- Heat oil in a large skillet over medium-high heat.
- Add onion, garlic, red pepper, chili powder, and cumin; sauté until tender.
- Drain and rinse the red beans, then add them along with the cooked rice to the skillet.
- Reduce heat and cook for 2 to 3 minutes until the mixture is hot, stirring constantly.
- Remove from heat and place about ½ cup of the mixture and ¼ cup of cheese in each tortilla.
- Wrap the tortillas and top with salsa and sour cream.
