Sun Dried Tomato Pasta with Spinach

Ingredients

The pasta

  • 12 oz Barilla Spaghetti
  • 1/2 cup reserved pasta water

The sauce

  • 1 Tbsp minced garlic
  • 8 oz baby spinach
  • 1/2 cup chopped fresh basil
  • 1/3 cup finely shredded parmesan cheese
  • 1/4 cup pine nuts
  • 1 jar sun dried tomatoes in olive oil
  • to taste salt and freshly ground black pepper

Instructions

  1. Cook spaghetti according to package instructions and drain, reserving 1/2 cup of pasta water.
  2. Heat oil from the sun dried tomato jar in a large pot over medium heat.
  3. Add garlic and sauté for 30 seconds, then add spinach and sun dried tomatoes, cooking until the spinach wilts.
  4. Toss the drained spaghetti into the pot, adding reserved pasta water as needed and seasoning with salt and pepper.
  5. Mix in basil and parmesan, then serve warm topped with pine nuts and additional parmesan.
