Sun Dried Tomato Pasta with Spinach

sun dried tomatoes in olive oil

Instructions
- Cook spaghetti according to package instructions and drain, reserving 1/2 cup of pasta water.
- Heat oil from the sun dried tomato jar in a large pot over medium heat.
- Add garlic and sauté for 30 seconds, then add spinach and sun dried tomatoes, cooking until the spinach wilts.
- Toss the drained spaghetti into the pot, adding reserved pasta water as needed and seasoning with salt and pepper.
- Mix in basil and parmesan, then serve warm topped with pine nuts and additional parmesan.
