Instructions
- Preheat the oven to 400°F.
- In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, and lemon zest. Gently toss in the raspberries.
- In another bowl, whisk together the eggs, sugar, melted butter, yogurt, and vanilla.
- Gradually add the dry ingredients to the wet ingredients in three batches, folding gently until just combined.
- Line 18 muffin cups with paper liners and spray with cooking spray. Fill each muffin cup ¾ full.
- Bake for 18-20 minutes, checking with a toothpick to ensure they come out with a few moist crumbs.
