Ingredients

Dry Ingredients

  • 2 ½ cups All Purpose Flour
  • 1 tbsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • Zest of 1 Lemon

Wet Ingredients

  • 2 large Eggs
  • 1 cup Non Fat Greek Yogurt
  • 8 tbsp Butter, Melted
  • 1 cup Sugar
  • 2 tsp Vanilla Extract

Add-ins

  • 1 cup Raspberries

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, and lemon zest. Gently toss in the raspberries.
  3. In another bowl, whisk together the eggs, sugar, melted butter, yogurt, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients in three batches, folding gently until just combined.
  5. Line 18 muffin cups with paper liners and spray with cooking spray. Fill each muffin cup ¾ full.
  6. Bake for 18-20 minutes, checking with a toothpick to ensure they come out with a few moist crumbs.
