Instructions
- Preheat the oven to 350°F.
- Spray a muffin tin with coconut oil.
- In a medium bowl, whisk together the protein powder, almond meal, ground flaxseed, cinnamon, baking powder, lemon zest, and salt.
- In a small bowl, whisk together the egg whites, Greek yogurt, mashed bananas, and melted coconut oil.
- Combine the wet ingredients with the dry ingredients using a spatula until no dry ingredients are visible.
- Gently fold the raspberries into the batter.
- Distribute the batter evenly into the muffin tins.
- Bake for 26-29 minutes until golden brown and a toothpick comes out clean.
