Ingredients

  • ½ cup vanilla protein powder
  • ½ cup ground almond meal
  • 1 tablespoon ground almond meal
  • 2 tablespoons ground flaxseed
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon lemon zest
  • ¼ teaspoon salt
  • ½ cup egg whites
  • ½ cup plain Greek yogurt
  • 2 pieces bananas, mashed
  • 4 tablespoons coconut oil, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a muffin tin with coconut oil.
  3. In a medium bowl, whisk together the protein powder, almond meal, ground flaxseed, cinnamon, baking powder, lemon zest, and salt.
  4. In a small bowl, whisk together the egg whites, Greek yogurt, mashed bananas, and melted coconut oil.
  5. Combine the wet ingredients with the dry ingredients using a spatula until no dry ingredients are visible.
  6. Gently fold the raspberries into the batter.
  7. Distribute the batter evenly into the muffin tins.
  8. Bake for 26-29 minutes until golden brown and a toothpick comes out clean.
  9. Serve and enjoy!
