Ingredients

  • 1 cup blanched almond flour

  • teaspoon celtic sea salt
  • 3 large eggs
  • ¼ cup grapeseed oil
  • 1 tablespoon lemon zest
  • teaspoon vanilla stevia
  • 1 cup frozen raspberries

Instructions

  1. 1. In a food processor, pulse together almond flour, baking soda, and salt.
  2. 2. Add eggs, oil, lemon zest, and stevia, and pulse for 20 seconds.
  3. 3. Stir in the frozen raspberries by hand.
  4. 4. Divide the batter between 8 paper-lined muffin cups.
  5. 5. Bake at 350°F for 30 minutes.
  6. 6. Allow to cool for 30 minutes before serving.
