Chestnut and Prosciutto Bread Stuffing

Ingredients

  • 4 tablespoons butter
  • 4 ounces prosciutto (diced)
  • cup onions (diced)
  • 2 cloves garlic (minced)
  • 2 cups chestnuts (shelled, roasted, and chopped)
  • ½ cup chicken broth
  • ¾ cup chicken broth (divided)
  • 1 medium apple (diced, Granny Smith recommended)
  • ½ cup parmesan cheese (grated)
  • 1 large egg
  • 4 slices whole-wheat bread (toasted and chopped into 1 to 2 inch chunks)

Instructions

  1. Preheat the oven to 350°F if baking as a separate casserole dish.
  2. In a medium-sized sauté pan, melt the butter over medium heat.
  3. Add the diced prosciutto and cook until browned and crispy, about 5 minutes.
  4. Add the diced onion and minced garlic, cooking until the onion softens.
  5. Stir in the chopped chestnuts and ½ cup of chicken broth, simmering until the liquid reduces by half.
  6. Remove from heat and mix in the diced apple, parmesan cheese, egg, toasted bread chunks, and the remaining ¾ cup of chicken broth.
  7. Use the mixture to stuff your turkey or transfer to a baking dish and bake for 20-25 minutes until golden brown on top.
