Crustless Quiche

Instructions
- Preheat the oven to 350°F (177°C).
- In a large bowl, mix together the halved tomatoes, chopped basil, minced garlic, and 4 oz of mozzarella. Transfer to a pie pan or baking dish.
- In the same bowl, whisk together the eggs, almond milk, salt, and pepper. Pour this mixture over the filling in the pan.
- Bake for 30-35 minutes until starting to set but still jiggly.
- Add the remaining mozzarella on top and bake for an additional 15 minutes until golden and fully set.
- Drain any excess liquid from the edges and garnish with more basil before serving.
