Crustless Quiche

Ingredients

The filling

  • cups Grape tomatoes
  • ½ cup Fresh basil
  • 4 cloves Garlic
  • 6 oz Fresh mozzarella cheese

The egg mixture

  • 8 large Eggs
  • cup Unsweetened almond milk
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. In a large bowl, mix together the halved tomatoes, chopped basil, minced garlic, and 4 oz of mozzarella. Transfer to a pie pan or baking dish.
  3. In the same bowl, whisk together the eggs, almond milk, salt, and pepper. Pour this mixture over the filling in the pan.
  4. Bake for 30-35 minutes until starting to set but still jiggly.
  5. Add the remaining mozzarella on top and bake for an additional 15 minutes until golden and fully set.
  6. Drain any excess liquid from the edges and garnish with more basil before serving.
