Cheeseburger Macaroni

Ingredients

The pasta

  • 12 ounces whole grain elbow macaroni

The filling

  • 2 tablespoons oil or butter
  • ½ medium yellow onion, peeled and diced
  • 1 pound lean ground beef
  • 1 ¾ teaspoons coarse salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano leaves
  • ½ teaspoon celery salt
  • ½ teaspoon dried mustard powder
  • ½ teaspoon ground black pepper
  • 5 tablespoons all-purpose flour
  • 2 cups unsalted beef stock
  • 2 cups milk (of choice)
  • 2 cups shredded mild cheddar cheese
  • 1 teaspoon Worcestershire sauce

Instructions

  1. 1. Boil a large pot of water and cook the macaroni according to package directions, then drain and set aside.
  2. 2. Heat oil or butter in a large stock pot over medium heat and sauté the onion until slightly soft.
  3. 3. Add the ground beef and cook until browned, breaking it up as it cooks.
  4. 4. Stir in the seasonings and sauté until fragrant.
  5. 5. Mix in the flour and cook for a couple of minutes, stirring constantly.
  6. 6. Add the beef stock and simmer until slightly thickened.
  7. 7. Stir in the milk and simmer until thickened, stirring frequently.
  8. 8. Remove from heat and mix in the cheese and Worcestershire sauce, adjusting seasoning as needed.
  9. 9. Fold in the cooked macaroni and serve.
