Ingredients

The pork and marinade

  • 1 ⅓ lbs pork tenderloin
  • 2 Tbsp dijon mustard
  • 2 Tbsp soy sauce
  • 3 Tbsp olive oil, divided
  • 1 Tbsp brown sugar
  • 1 clove garlic, minced
  • 10-15 cranks freshly cracked pepper

Pan sauce (optional)

  • 1 Tbsp butter
  • 1 Tbsp dijon mustard
  • 1 Tbsp brown sugar
  • 1 cup vegetable broth

Instructions

  1. Mix dijon mustard, soy sauce, 2 tablespoons of olive oil, brown sugar, pepper, and minced garlic in a bowl.
  2. Place the pork tenderloin and marinade in a zip-top bag, ensuring it covers the meat, and refrigerate for at least 2 hours.
  3. Preheat the oven to 400°F and heat 1 tablespoon of olive oil in a skillet over medium heat.
  4. Remove excess marinade from the tenderloin and sear it in the skillet for about 5 minutes on each side until golden brown.
  5. Transfer the tenderloin to a foil-lined baking sheet and roast in the oven for 30 minutes until the internal temperature reaches 145°F.
  6. While the tenderloin is baking, prepare the pan sauce by melting butter in the skillet, then adding either some marinade or additional mustard, brown sugar, and vegetable broth.
  7. Simmer the sauce until reduced by half, whisking occasionally.
  8. Let the tenderloin rest for 5-10 minutes after baking, then slice and serve with pan sauce.
