Instructions
- Mix dijon mustard, soy sauce, 2 tablespoons of olive oil, brown sugar, pepper, and minced garlic in a bowl.
- Place the pork tenderloin and marinade in a zip-top bag, ensuring it covers the meat, and refrigerate for at least 2 hours.
- Preheat the oven to 400°F and heat 1 tablespoon of olive oil in a skillet over medium heat.
- Remove excess marinade from the tenderloin and sear it in the skillet for about 5 minutes on each side until golden brown.
- Transfer the tenderloin to a foil-lined baking sheet and roast in the oven for 30 minutes until the internal temperature reaches 145°F.
- While the tenderloin is baking, prepare the pan sauce by melting butter in the skillet, then adding either some marinade or additional mustard, brown sugar, and vegetable broth.
- Simmer the sauce until reduced by half, whisking occasionally.
- Let the tenderloin rest for 5-10 minutes after baking, then slice and serve with pan sauce.
