Easy Fruit Salad

Ingredients

The Fruit

  • 1 pound fresh strawberries, sliced and halved
  • 1 pound diced fresh pineapple
  • 1 pint fresh blueberries
  • 5 pieces kiwi fruit, peeled and cut into bite-sized pieces
  • 2 cups seedless red grapes
  • 1 large banana, peeled and cut into bite-sized pieces
  • to taste none chopped fresh mint (optional)

The Dressing

  • ½ medium orange, zest
  • 3 tablespoons orange juice
  • 1 small lime, zest
  • 1 small lime, juice
  • 3 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon poppy seeds

Instructions

  1. Chop all the fruit except the banana and place in a large serving bowl.
  2. In a small bowl or measuring cup, whisk together the orange zest and juice, lime zest and juice, honey, vanilla extract, and poppy seeds to make the dressing.
  3. Pour the dressing over the fruit and toss gently to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Just before serving, stir in the banana and sprinkle with fresh mint.
