Ingredients

Fresh Fruit

  • 2 cups Strawberries (quartered)
  • 1 ½ cups Blueberries
  • 1 cup Green grapes (halved)
  • 3 medium Mandarin oranges (peeled and wedges separated)
  • 1 ½ cups Fresh pineapple (diced)
  • 2 medium Kiwi (diced or sliced into wedges)
  • ¼ cup Fresh mint (optional; roughly chopped)

Dressing

  • 2 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 2 tbsp Honey

Instructions

  1. Combine all the fruit (and mint, if using) in a large bowl and set aside.
  2. In a small bowl, whisk together the lemon juice, lemon zest, and honey until well combined.
  3. Pour the dressing over the fruit and gently toss to coat.
