Red Quinoa Berry Breakfast Bowl

Ingredients

The base

  • 2 ½ cups water
  • 1 cup uncooked red quinoa
  • ½ teaspoon ground allspice
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 tablespoon pure maple syrup (optional)

The toppings

  • ½ cup chopped walnuts
  • ¼ cup ground flax seeds
  • 2 cups assorted red berries (cranberries, strawberries, pomegranate seeds, raspberries), fresh or frozen
  • 1 cup plant-based milk, unsweetened

Instructions

  1. Bring water to a boil in a pot.
  2. Add quinoa, allspice, nutmeg, cinnamon, ginger, and maple syrup (if using) and stir well.
  3. Reduce heat to medium, cover, and cook until the quinoa is tender and the liquid is absorbed, about 15 minutes.
  4. Remove from heat and stir in walnuts and flax seeds.
  5. Serve ¾ cup of the mixture in individual bowls, topping each with ½ cup of berries and ¼ cup of plant-based milk.
