Ingredients

The chicken

  • 2 lbs boneless skinless chicken breasts or thighs

The broth

  • 1 cup sofrito stock or chicken broth or vegetable broth

The vegetables

  • 1 cup bell peppers, finely diced
  • 1 cup sweet onion, finely diced

The seasonings

  • 1 teaspoon table salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika or sweet paprika
  • ½ teaspoon cumin (optional)

Instructions

  1. 1. Turn on the slow cooker, set it to low, and set the timer for 2 ½ hours.
  2. 2. Add the chicken to the slow cooker.
  3. 3. Pour the sofrito stock over the chicken.
  4. 4. Add the diced peppers and onions on top of the chicken.
  5. 5. Add the salt, black pepper, smoked paprika, and cumin, then stir to combine.
  6. 6. Cover and cook on low for 2 ½ hours.
  7. 7. Once cooked, remove the chicken and shred it using two forks.
  8. 8. Return the shredded chicken to the slow cooker with the stock and cook for another hour and a half.
  9. 9. Remove the shredded chicken from the slow cooker when finished and drain any excess stock.
  10. 10. Use the shredded chicken for various dishes like soups, tacos, or sandwiches.
