Slow Cooker Shredded Chicken

Instructions
- 1. Turn on the slow cooker, set it to low, and set the timer for 2 ½ hours.
- 2. Add the chicken to the slow cooker.
- 3. Pour the sofrito stock over the chicken.
- 4. Add the diced peppers and onions on top of the chicken.
- 5. Add the salt, black pepper, smoked paprika, and cumin, then stir to combine.
- 6. Cover and cook on low for 2 ½ hours.
- 7. Once cooked, remove the chicken and shred it using two forks.
- 8. Return the shredded chicken to the slow cooker with the stock and cook for another hour and a half.
- 9. Remove the shredded chicken from the slow cooker when finished and drain any excess stock.
- 10. Use the shredded chicken for various dishes like soups, tacos, or sandwiches.
