Ingredients

The pasta

  • 8 oz. pasta or noodles

The pesto

  • 1 cup packed fresh basil
  • 1 whole avocado
  • 2 tsp. lemon juice
  • 3–4 cloves garlic
  • ¼ cup extra-virgin olive oil
  • 1 tsp. kosher salt
  • 1 pinch freshly ground black pepper

Optional garnish

  • to taste toasted pine nuts
  • to taste shaved Parmesan

Instructions

  1. 1. Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and set aside.
  2. 2. In a food processor, combine basil, avocado, lemon juice, garlic, and olive oil to make the pesto. Process until smooth and season with salt and pepper.
  3. 3. Toss the drained pasta with the pesto until well-coated, then serve in bowls topped with toasted pine nuts and shaved Parmesan.
