Instructions
- 1. Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and set aside.
- 2. In a food processor, combine basil, avocado, lemon juice, garlic, and olive oil to make the pesto. Process until smooth and season with salt and pepper.
- 3. Toss the drained pasta with the pesto until well-coated, then serve in bowls topped with toasted pine nuts and shaved Parmesan.
