Smoked Salmon Breakfast Frittatas

Ingredients

  • 8 large eggs
  • ½ cup unsweetened almond milk
  • 2 tablespoons fresh dill, minced
  • 2 cups packed spinach, destemmed
  • ½ shallot finely minced
  • 5 oz. smoked salmon filet
  • ¼ cup cream cheese

Instructions

  1. Preheat the oven to 350ºF and spray a nonstick muffin tin with coconut oil cooking spray.
  2. In a medium bowl, crack the eggs and whisk them. Add almond milk and dill, then whisk until combined.
  3. Evenly distribute spinach, shallot, and smoked salmon into each muffin cup.
  4. Fill each muffin cup about ¾ full with the egg mixture and add small dollops of cream cheese on top.
  5. Carefully stir the mixture in each muffin cup to combine.
  6. Bake in the oven for 16-18 minutes.
  7. Remove from the oven and let cool before taking the muffins out of the tin.
