Smoked Salmon Breakfast Frittatas

Instructions
- Preheat the oven to 350ºF and spray a nonstick muffin tin with coconut oil cooking spray.
- In a medium bowl, crack the eggs and whisk them. Add almond milk and dill, then whisk until combined.
- Evenly distribute spinach, shallot, and smoked salmon into each muffin cup.
- Fill each muffin cup about ¾ full with the egg mixture and add small dollops of cream cheese on top.
- Carefully stir the mixture in each muffin cup to combine.
- Bake in the oven for 16-18 minutes.
- Remove from the oven and let cool before taking the muffins out of the tin.
