Ingredients

The crust

  • cups graham crackers, crushed
  • ¼ cup butter, melted

The filling

  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 180C/350F and prepare two muffin tins with 18 muffin liners.
  2. Mix the crushed graham crackers with melted butter and press the mixture into the bottom of the muffin liners.
  3. Bake the crust for 10 minutes until firm, then reduce the oven temperature to 150C/300F.
  4. In a mixing bowl, beat the cream cheese until smooth, then add the remaining filling ingredients and mix until combined.
  5. Divide the cheesecake batter among the muffin cups and bake for 22-25 minutes until set.
  6. Allow the cupcakes to cool completely, then refrigerate for at least 4 hours before serving.
