The crust

Instructions
- Preheat the oven to 180C/350F and prepare two muffin tins with 18 muffin liners.
- Mix the crushed graham crackers with melted butter and press the mixture into the bottom of the muffin liners.
- Bake the crust for 10 minutes until firm, then reduce the oven temperature to 150C/300F.
- In a mixing bowl, beat the cream cheese until smooth, then add the remaining filling ingredients and mix until combined.
- Divide the cheesecake batter among the muffin cups and bake for 22-25 minutes until set.
- Allow the cupcakes to cool completely, then refrigerate for at least 4 hours before serving.
