Instructions
- Prepare the filling by combining cream cheese, white sugar, and confectioners sugar in a bowl and beat until creamy.
- Add egg yolk, vanilla, and lemon zest, then mix until fully combined. Cover and refrigerate for 2 hours.
- For the crust, mix crushed graham crackers, salt, egg white, and softened butter in a large bowl until combined.
- Gradually add flour while stirring until a dough forms. Mold the dough into a ball, cover, and refrigerate for 1 hour.
- Preheat the oven to 350°F (175°C).
- Take a portion of dough the size of a golf ball, roll it into a ball, and flatten it on a greased baking sheet, creating a well in the center.
- Fill the well with a spoonful of the cheesecake filling, smoothing it out.
- Repeat with remaining dough and filling, then bake for 12-15 minutes until filling is set.
- Let cool for 2 minutes on the baking sheet before transferring to a cooling rack.
- Top with fruit topping before serving.
