Ingredients

Filling

  • 4 oz. cream cheese
  • 1 tsp. lemon zest
  • ¼ cup confectioners sugar
  • ¼ cup white sugar
  • 1 egg yolk egg yolk
  • 1 tsp. vanilla

Crust

  • 1 cup crushed graham crackers
  • 1 stick butter, very softened
  • 1 egg white egg white
  • ¾ cup flour
  • 1 tsp. salt

Instructions

  1. Prepare the filling by combining cream cheese, white sugar, and confectioners sugar in a bowl and beat until creamy.
  2. Add egg yolk, vanilla, and lemon zest, then mix until fully combined. Cover and refrigerate for 2 hours.
  3. For the crust, mix crushed graham crackers, salt, egg white, and softened butter in a large bowl until combined.
  4. Gradually add flour while stirring until a dough forms. Mold the dough into a ball, cover, and refrigerate for 1 hour.
  5. Preheat the oven to 350°F (175°C).
  6. Take a portion of dough the size of a golf ball, roll it into a ball, and flatten it on a greased baking sheet, creating a well in the center.
  7. Fill the well with a spoonful of the cheesecake filling, smoothing it out.
  8. Repeat with remaining dough and filling, then bake for 12-15 minutes until filling is set.
  9. Let cool for 2 minutes on the baking sheet before transferring to a cooling rack.
  10. Top with fruit topping before serving.
