Chocolate Caramel Pecan Pie Bites

Instructions
- 1. Boil coconut milk, coconut sugar, and salt in a saucepan.
- 2. Reduce heat to medium-low and simmer for 30-40 minutes, stirring occasionally.
- 3. Once thickened, pour the caramel into a glass jar and let it cool for 1 hour.
- 4. Mix the cooled caramel with chopped pecans in a bowl.
- 5. Scoop about 2 tablespoons of the mixture onto a parchment-lined baking sheet.
- 6. Freeze the bites for 2 hours.
- 7. Melt the chocolate and add about 1 tablespoon to each bite, topping with flaky sea salt.
- 8. Freeze for another 30 minutes before serving.
