Ingredients

The filling

  • 1 can coconut milk
  • 1 cup coconut sugar
  • ¼ tsp salt
  • cups chopped pecans

The topping

  • 1 cup chocolate chips or chocolate bar
  • to taste flaky sea salt

Instructions

  1. 1. Boil coconut milk, coconut sugar, and salt in a saucepan.
  2. 2. Reduce heat to medium-low and simmer for 30-40 minutes, stirring occasionally.
  3. 3. Once thickened, pour the caramel into a glass jar and let it cool for 1 hour.
  4. 4. Mix the cooled caramel with chopped pecans in a bowl.
  5. 5. Scoop about 2 tablespoons of the mixture onto a parchment-lined baking sheet.
  6. 6. Freeze the bites for 2 hours.
  7. 7. Melt the chocolate and add about 1 tablespoon to each bite, topping with flaky sea salt.
  8. 8. Freeze for another 30 minutes before serving.
